Farmhouse Pumpkin Pie

In honor of Thanksgiving, I took a break from the remodel for an hour and made some holiday yummies! So what makes a pumpkin pie a “farmhouse pumpkin pie” you ask?

Well it s easy! First, find yourself a farmhouse. Then, bake a pumpkin pie inside of it! There you have it: Farmhouse pumpkin pie 🙂

I’ve never made a pumpkin pie from a real pumpkin before (wait…I’ve never made ANY pumpkin pie before…). I learned that it really isn’t hard at all!

Ingredients:

2 cups puree’d pumpkin (sugar/pie pumpkin, oil for coating)

1/2 cup dark brown sugar, packed

1/3 cup white sugar

1 (12 oz.) can of evaporated milk

1/2 teaspoon salt

2 full eggs and 1 egg yolk

1/4 teaspoon lemon zest

1  and 3/4 teaspoon pumpkin pie spice

1 pie crust

*Makes 1 delicious farmhouse pumpkin pie

 

Pumpkin Puree:

Cut your sugar/pie pumpkin in half  and scoop out the guts.

Place open side down on cookie sheet. Coat skin with oil. Cook at 350 degrees F until pumpkin can be pierced with fork (about 45 minutes). Watch closely as to not burn or toast the pumpkin.

Once the pumpkin halves have cooled some, scoop the meaty portion out of the skins and place in a bowl. Puree until a smooth consistency. Most “ball sized” pumpkins should make at lease the required 2 cups needed for the recipe.

Making the pumpkin Pie:

Preheat oven to 425 degrees F

Mix sugars, pumpkin spice, and lemon zest into a medium sized bowl.

Add beaten eggs (2 full, 1 yolk) to this mixture. Mix.

Add the pumpkin puree and mix till a smooth consistency. Pour in the 1 can of evaporated milk. Mix well.

 

Now, you can choose whether you want to use your own homemade crust or use a store-bought version. I chose store-bought (now time for making my own!).

Roll out your crust and line your pie plate. Fill with the farmhouse pumpkin pie filling.

Bake for 15 minutes at 425 degrees F.  Cover your crust with foil (as recommended on pie crust box) and turn down oven to 350 degrees F and continue cooking pie for 30-35 minutes. Pie is done when inserted knife comes out almost clean (don’t wait till it comes out completely clean as the pie will then be over cooked). Pie will set as it cools. Allow to cool for at least an hour.

ENJOY! Add some whipped cream if you desire!
